Nutrition & Calorie Comments  

FYI - My Moosewood lowfat cookbook says you can sub whole-wheat tortillas for the noodles. It would probably add a little fiber bump too.
Couldn't find large shells, so I used whole grain shell-shaped pasta and mixed everything. Left out the salt and egg (not stuffing anything), added a sauteed chopped onion, only used 1/2 c lowfat ricotta, used a jar of sauce. Tasted great! Will definitely make again.
Yum! Plenty of salt in the other ingredients so I left it out of the mixture. Used fat free ricotta and reduced fat parm. Chose a reduced sodium sauce (Healthy Choice). Will definitely make this again. My husband didn't even miss the meat. ;-) Thanks for posting!
