Very similar to Saltgrass Restaurant's Hickory Chicken!
I pound breasts evenly flat, quickly cook/brown in a cast iron skillet, mix a little salsa into bbq sauce, coat breasts, top with sauteed mushrooms, top with pepper jack cheese, cover skillet for a few minutes 'til cheese melts. Ahhhh!
