I tried this for the first time and I love it! Coconut is my favorite and the fact that this is calorie conscious makes this my new go-to dessert!

Looks great. Low in calories and carbs. A winner.
This is pretty much entirely empty calories with no nutritional value, and it is surprising to find such a recipe on a site devoted to "healthy" living. And no, I haven't tried it: I wouldn't dream of eating this sort of rubbish.
Mine turned out runny! I only had low-fat milk, and I don’t know if that is why....I will give it one more try using skim milk.
I cut the recipe in half because I live alone and did not use a crust to save on calories. I also had some lite coconut milk on hand and used that in place of the skim milk. Found you don't need to each much of this to feel satisfied. Really liked it!
when not using shell is it only 70 calories or is it 170 calories with just cream and then if not using pie shell you save 100 calories? just wanted to ask to make sure bc i am going to make this for thanksgiving
so gooooooood!! am taking it to a picnic this evening. made it without a crust and used sugar free instant vanilla pudding. tastes better than coconut cream pie in my book. will deffinately make again and will try many other flavors.
Are you saying you cut the pie in 12 rather than 8? That would be hard to do? What would the nutritional values be if you used 8 now that I just got a pie 8 divider. No rating yet It isin the refrigerator for 4 hours now. Bigger than Joanna Lund recipes
This definitely satisfied my sweet tooth. I took the tip of not using a pie shell and sprinkled the graham crumbs on top. It was Perfect! Thanks for Sharing . I am not sure on how the calories were caculated. I counted 117 minus the graham crust . Still worth every bite.
I have made my version of this for years and never got a runny pie with the cool whip. I use less milk with the puddings. I also use SF Fat free cheesecake pudding . LIttle boys love it with chocolate pudding...
