Nutrition & Calorie Comments

I make a gluten-free and much lower carb version of this by using crushed pork rinds instead of panko crumbs--the rinds make them seem like they are fried when they are not. Submitted by:

Many Spark recipes do not tell you how many people the recipe serves. The nutritional info seems to be for one serving, but no way to be sure. It would be very helpful if these omissions were corrected. RS B Submitted by:

This was wonderful! I add Hawaiian sea salt to mine and it was great along with some chives. Submitted by:

I've tried this tonight and it was extremely good. I did mine with boneless chicken thighs. I marinated the wet mixture with Ms Dash Lime Fiesta seasoning and juice from one lime. I mixed the pankos/coconuts with garlic powder, paprika and a tsp of salt... so so so so good. Submitted by:

Thanks for the measurements, Sparkly!
This was AWESOME! Dh's first comment - "Keeper". I used unsweetened coconut, vanilla soy milk and coconut manna with the egg, bran cereal for the panko, and chicken breasts. Forgot the baking spray & salt :-) Perfection! Thank you for sharing!!

Very good and very easy! However, my calorie count came out much higher (315 calories for 4oz chx breast). Otherwise it was very good! Submitted by:

Kitty, you can figure the quantities by looking at the nutritional breakdown and multiply by 6 servings:

6 chicken thighs
1 cup shredded coconut
1/4 cup coconut milk
1/2 panko
1 egg

I'm DEFINITELY making this! Sounds DELISH!

Super easy! The first tme I made this it was kind of bland. Someone suggested used crushed croutons instead of bread crumbs for more flavor, (good idea.) I added a little curry powder to the dry mixture and it was WONDERFUL. It gave the dish a little more flavor without adding a ton of calories. Submitted by:
