Nutrition & Calorie Comments  

This was very yummy! The only thing we did differently was: add about a cup of manicotti filling that we had left over and placed that in between the two layers of eggplant...added calories, but the cheeses used for the manicotti filling were low calories/fat. We will definitely make this again!
