Ingredients

    3 Chicken Breast halves no skin, boneless and poached
    2.25 tbsp Butter, salted
    2 tbsp Flour, whole grain
    1 cup sliced Mushrooms, fresh,
    1.5 cup Chicken Broth
    1 oz dry sherry
    2 tbsp Parmesan Cheese, grated,
    2 tbsp Bread crumbs, dry
    2 tbsp Parsley,
    .75 pounds trimmed Asparagus, fresh

Directions

Preheat oven to 375degrees.

In small saucepan melt 2 tbsp butter. Whisk in flour and whisk for 1 minute. Stir in broth until smooth. Add sherry and simmer for 5 minutes.

In a small skillet melt remaining butter. Saute mushrooms until soft.

Place trimmed asparagus in bottom of baking pan. Top with chicken. Add mushrooms and pour sauce over top. Combine parmesan, bread crumbs and parsley in a small bowl then sprinkle on top of chicken.

Bake for 25 minutes

    Very Good
    I give this 4 stars though I don't think I did it justice. I had more chicken than needed- it affected the meat/sauce ratio. Still the sauce was tasty & looked lovely. I'll probably make more next time. Re poaching,it would take longer to cook if you didn't do it. I didn't think it was too fussy. - 9/30/15

    Curious why the chicken needs to be poached first. I would think the baking time would cover it? - 3/30/10

    The chicken breasts I usually have are very thick. Poaching allows the meal to come together quickly. If you use raw breasts it could double the cooking time. You could use the breast left over from a roast chicken instead, or increase the cooking time.
