Ingredients

    2 cups Instant White Rice (uncooked)
    2 cups Water
    1 pkg. Hillshire Farm Lite Smoked Sausage
    5 cups Flav-r-Pac Normandy Vegetable Blend (frozen)
    1 cup Great Value Whole Kernel Corn (frozen)
    1/4 cup Pacific Free Range Chicken Broth (low sodium/fat free)
    1/4 cup chopped onion
    Black Pepper, Garlic Powder & Thyme to taste
    Pam Cooking Spray

Directions

Spray an electric skillet with Pam. Add vegetables & onions let cook for about 10 minutes. In the meantime prepare 2 cups of rice in 2 cups of water according to instructions on the box. Add sliced smoked sausage, cooked rice, broth and seasoning to the skillet with the vegetables and onions and continue to cook for about 5 minutes; turn down to simmer for 10 minutes. Serving size about 3/4 cups.

    Incredible!
    I thought this was just OK, but my son loved it. We both, tho, thought it needed something. He suggested more sausage, I was thinking cream of chicken soup might help. It is very easy, which is a big plus. We will be making it again, tho we will tweak it some. - 4/21/11
