Introduction

Use this delicious recipe to make healthy and nutritious pancakes, OR waffles. The recipe is very versatile and you can substitute soy milk for regular or even buttermilk and honey for water and sugar substitute or substitute the whole eggs for eggbeaters! It makes a wonderful, filling, and guilt free breakfast. Most pancakes and waffles have about 400 calories each, these only have 110! Ingredients

    2 c. quick oats
    1c. wheat flour
    1/2 tsp baking soda
    2 tsp baking powder
    1 tsp salt
    2 tbs Lite Honey
    2 cups Vita Soy, or soymilk
    2 large eggs
    3 tbs extra virgin olive oil, or canola oil
    1tsp almond extract

Directions

Stir together all dry ingredients
Blend or mix all wet ingredients
Mix wet ingredients with the dry ingredients
Spoon onto warm pan or waffle maker sprayed with low fat cooking spray or canola oil
Cook for 3-5 min in waffle maker or for pancakes until edges are golden brown
Makes 16 Waffles in Belgian Waffle maker, or 16 1/4 cup pancakes

Update: I noticed someone said that they did not get 16 servings with this recipe, I have made them many times and always come up with 16. You will notice the size in the image, they vary in size depending on what type of waffle maker you have.
Enjoy with a side of fruit, no syrup necessary!
