Ingredients

    4 skinless boneless chicken breasts
    1 stalk celery, chopped
    1/2 onion, chopped
    1 small apple, chopped
    1/3 c. seedless grapes, halved
    1/2 c. chopped pecans
    1/8 tsp. ground pepper
    1/2 tsp. curry powder
    3/4 c. light mayonnaise

Directions

Dice and cook chicken. Combine with other ingredients and chill.

    I made this recipe. It is so tasty. I didn't have pecans so I used pine nuts. I omitted the celery and onion. However, I did add a sweet and tangy mustard. So delicious. Has just enough "sweetness" that it satisfies my sweet tooth. Definitely recommend. - 3/13/10

    Super easy to make and super tasty. We didn't have celery so substitued a diced orange bell which gave the salad a really nice pop. Would have also thrown some currants in there if we had them. Will make over and over! - 9/10/08

    I have not made this yet, but I would change one ingredient to Vegeannaise instead of mayonnaise. There are fewer calories and fewer fat calories. - 7/4/07

    This is terrific! I started with a package of pre-cooked chicken, so I made less than the whole recipe, but all the ingredients are just wonderful together! You could eat this on a bed of lettuce or on a slice of bread. This will be one of my new favorites. - 7/3/07
