Introduction

Ingredients

    Hodgson Mill Yellow Corn Meal, 1.5 cup
    Flour, Stone ground whole wheat, Hodgson Mill, .5 cup
    Crisco, 2 tbsp
    Buttermilk, lowfat, 1.75 cup
    Baking Powder, 2 tsp
    Baking Soda, 1 tsp
    Egg, fresh, 2 large
    Kosher Salt, 1 tsp

Directions

1. Preheat oven to 400
2. Put crisco in cast iron skillet and heat in oven till melted & hot
3. Sift or Mix with wisk all dry ingrediants.
4. Mix eggs with buttermilk
5. Mix wet with dry
6. Add the hot crisco an mix
7. Return to the hot skillet - top with cracked pepper (optional)
8. Bake for 25-35 minutes
