A quick dinner with a kick! A quick dinner with a kick!
Number of Servings: 4

Ingredients

    1-1/2 tbsp olive oil
    12 oz scallops
    5 - 6 oz frozen veggies
    1 cup diced tomato
    1 tbsp teriyaki sauce
    1/4 tsp crushed red pepper flakes

Directions

Heat olive oil in skillet or wok over high heat.
Add scallops and stir fry for 1 minute.
Add frozen veggies and tomatoes. Stir fry until scallops are firm and veggies are hot, about 2 - 3 minutes.
Stir in teriyaki sauce and crushed pepper flakes.
Serve over 1/2 cup cooked brown rice.

    WOW!!! Made this for dinner tonight and was it GOOD!! If had been served this at P.F. Changs it would immediately become my favorite item on the menu. The only modification I made was to use twice the weight of vegitables (Green onions, Green Peppers, Mushrooms, Carrots, and Pea Pods). - 5/1/09

    I'm thinking this would be better with fresh veggies sauted first and then adding the scallops. Frozen veggies tend to be soggy and scallops don't take long to cook. Good theory though. - 11/10/08

    I'll have vegies or salad on the side but when it comes to scallops,for me,I want to savor the scallop by it's self.
    Recipe sounds great,I'm just a purest when it comes to some foods.Don't forget the lime/lemon to inhance flavor and aid in digestion....Chef Jim, mmmmm,scalops!

    This Recipe was very flavorful and easy to make. I did tweak it a little to my taste by adding a little garlic and instead of teriyaki sauce I used a TBS of low-cal teriyaki Marinade....I will definitely make this again. - 3/19/07
