Ingredients

    2 Chicken Breasts
    1 can Coconut Milk
    1 Onion, chopped
    2 Jalapeno peppers, seeded and chopped
    3 tomatos, seeded and chopped
    1 tsp turmeric
    1 tsp ground coriander seed
    1 tsp ground cumin
    1 tsp cayenne pepper
    1 tsp minced ginger
    2 cloves of garlic, minced
    2 tbsp Olive Oil
    Salt and Pepper

Directions

In a medium bowl, mix the cumin, cayenne pepper, turmeric, and coriander.

Place the chicken in the bowl, season with salt and pepper.

Heat 1 tablespoon olive oil in a skillet over medium heat. Place the chicken in the skillet. Cook 10 to 15 minutes on each side, until no longer pink and juices run clear. Remove from heat and set aside.

Heat the remaining olive oil in the skillet. Cook and stir the onion, ginger, jalapeno peppers, and garlic 5 minutes, or until tender. Mix in the tomatoes and continue cooking 5 to 8 minutes. Stir in the coconut milk and add spice mixture. Add the chicken back (I cut each breast in half) in and let simmer for 10-15 minutes.

    Very good meal. Cooked it for my parents, they loved it. We had basmati rice simmered in the remaining mix in the skillet with coconut milk. yummy - 6/13/11

    This is so much like the food we ate in Brazil! I didn't have curry or tumeric and I added a few other spices instead and it didn't take away for the great flavor. Putting it over rice it was like we were back in Brazil eating their great food.! - 2/7/11

    My husband and I loved this recipe. I made quinoa with onion, celery & carrots and served this chicken dish and it was amazing. I added a few chicken wings and my husband wants to make chicken wings with this sauce next. - 1/23/13
