Ingredients

    5 large ripe tomatoes; peeled and cored
    1/2 pkg. (454 g) medium tofu
    2 tsp vegetable stock
    1 celery stalk; finely chopped
    1 medium onion; finely chopped
    1 tsp lemon or lime juice
    1 tbsp parsley
    salt and pepper to taste

Directions

Puree tomatoes with tofu.
Put into pot with rest of ingredients.
Cook for 20 minutes or until celery and onions tender. Serve.
