Ingredients

    6 hard boiled eggs, peeled and cut lengthwise

    1/4 C nonfat plain Greek yogurt

    2 tsp dijon mustard

    1/4 tsp pepper

    1/8 tsp salt

    paprika to garnish

First you need to hard boil the eggs! Place the eggs in a pot, add just enough cold water so that they are fully covered, and put on high heat.

Cover and bring them to a boil, then turn off the heat and let them sit, still covered, for 12 minutes. Then they are ready! I usually rinse them with some cold water and let them sit for a bit to cool them down first. You can also put them in an ice bath.

Once theyfve cooled, peel them and cut them lengthwise.

Place the whites on a plate and the yolks in a bowl. Add the remaining ingredients (except for the paprika) to the yolks in the bowl, and mash it all together.

Once it is mostly uniform, smoosh the mixture back into the empty egg whites, top with a sprinkle of paprika, and enjoy!

    One trick I have learned, if you put all the yolk ingredients in a plastic food storage bag, mix it by squeezing it then cut a corner and use it to squeeze the mixture into the egg. Less cleanup and makes prettier eggs - 7/23/10

    First time trying Greek Yogurt in any fashion, and I have to say these are delicious. I used to use Miracle Whip, but I'm following a low carb diet now and these are my new favorite snack. - 6/13/10

    Wonderful! Also try mashing chick peas as a substitute for half the egg yolks. You'll never know the difference and 1/2 the fat and cholesterol. - 11/6/10

    I loved this. It was healthy and good. I like to spice mine up so this time, I made exactly as called out, but sometimes I add a couple drops of tabasco (or hot sauce of choice) - sometimes I'm wanting vinegary so I'll use dill pickle juice, can always spruce it up, but this is an excellent base. - 7/23/10

    These were a lot better right after you make them. Allowing for them to sit while you prepare the rest of your food causes they acid from the Greek Yogurt to really come through and not in a good way. Liked the idea of these much better than the finished product. - 8/13/10

    I love deviled eggs, will try this recipe soon. I'll come back and rate it; based on the ingredient list I'm sure they'll get a five!

    Incidentally, cooling the eggs quickly after cooking prevents the green coating the yolks get. That is iron sulfide, and quick cooling stops the reaction

    Very good. Did still miss the mayo a bit, but maybe I'll add 1 TBSP of a light mayo next time. I do love relish in mine as well, but I use dill relish. I garnish with dill also, rather than paprika. My granny always used finely chopped green olives instead of relish - that's good too! - 7/13/10

    If you want to try something a little out of the ordinary, add turmeric. It is a staple of any egg salad we make and complements the flavor of a hard boiled egg beautifully. - 1/22/11

    I've been using plain Greek yogurt instead of mayo for chicken salad and tuna salad for quite some time. I don't tell my husband because he loves mayo. He has never mentioned that anything tastes different to him. I haven't made deviled eggs for a while. I think I'll be cooking some up tomorrow. - 11/3/10

    Easy to make. I agree with PP. Put all ingredients in a quart sized ziploc, then squish around, cut corner of bag to refill (e.g. you've made your own pastry bag). Also agree with PP - added 1 tsp dill pickle juice (just the juice out of the jar) and added 1 shallot chopped extra fine. - 12/3/10

    I'm going to have to try this. Another twist my family likes is bacon but to keep it on the healthier side use turkey bacon very crisp and crumble into the yolk mixture. - 10/12/10

    Excellent. I have also used pickle relish - both dill or sweet. If you use pickle vinegar, you need to adjust nutrition values for high sodium in dill vinegar or sugar & sodium in sweet. I have made with regular fat free yogurt also. Great alternative to mayo or miracle whip. - 7/31/10

    Would it be possible to adjust the recipe to show that it provides 6 servings (or even 12)? Having the recipe stats for a serving of 3 halves of a devilled eggs doesn't seem a natural reflection of a typical serving size (IMHO). - 1/7/11

    Sound great! It was one of the first things I looked at and was pleased to figure I'd get to eat 3 deviled egg halves (1.5 eggs). That's how many I usually eat. With questions though, I ran it through the recipe calculator and verified the nutrition data. This one's a winner! - 2/27/11

    I can't stand Greek yogurt, but this sounds like an interesting idea to use it in a dish instead of just eating it plain. I found it strange people want to replace the egg yolks - EGGS ARE GOOD FOR YOU - Even the yolks! Just remember moderation, folks! - 1/7/11

    Think the avocado sounds interesting as a low fat option, but what gives it a flavor, as I think avocado needs other things to give it 'taste'? Think if I tired the avocado I might go half and half egg yolk to avacado ratio. - 8/19/10

    I actually just use Kraft-free Mayo for making deviled eggs. It has fewer calories than this recipe, and is closer to the real thing.
    Same method as the usual, but with a little mustard and (optional) pickle juice, and black pepper if desired. Calories are closer to egg+12, so < 100 per 2 halves

    So good! 2nd time I made it I added finely chopped green onion and a couple TBSP of pickle juice and added a green olive as a garnish. 18 eggs worth and not a single person noticed anything "off". - 1/20/11

    I need to get eggs to try this, but I have been finding egg salad bland for me. At the farmers market they have some jalapeno relish and I have been putting about a teaspoon of that in when I have 4 eggs. I am wondering how that would work for deviled eggs.
