Ingredients

    1 1/2 Cups of Oatmeal
    1/2 cup of peanut butter
    1/2 cup of honey
    1 Tbs of almond extract

Directions

In medium bowl, stir together peanut butter, honey and almond extract until well mixed. Stir in oats. Drop rounded spoonfuls onto parchment paper. Bake in 350 degree oven for 8 to 10 minutes until lightly browned. Cool 2 minutes.

Yield: 2-3 dozen depending on the size you make these.
I prefer making these the size of cookies.

Optionally you can add 1/2 cup of sunflower seeds to this
Also a handful of dried fruit can be added

    I've used quick oats, instant and regular...they all work about the same in this recipe

    I 'll have to do it again, because my new oven burns EVERYTHING, this is horrible.
    But if i take most of the burnt cookie of, it's still quite nice

    Fantastic Recipe!! All Natural Ingrediants!! I thought they would bake up hard and crisp, but to my surprise they wre chewy and delicious. A lot like a soft granola bar. Recipe is easily adapted to your family's likes, we added mini chocolate chips. - 3/3/11

    We enjoyed them, easy to make. I LOVE that it is all real- natural ingredients. We did do 1 tsp. almond extract and 2tsp. of vanilla- so the almond was not as strong. - 7/10/10
