Ingredients

    16 oz lean ground beef
    2 cups water
    2 cups carrots, chopped
    1 small onion, chopped
    1/2 cup mushrooms, chopped
    3-1/2 cups diced tomatoes, no salt
    1 cup frozen peas
    2-3/4 cup dry whole wheat noodles

Directions

Brown and drain ground beef.
Add water, carrots, onion, mushrooms, and tomatoes.
Simmer until vegetables are tender.
Meanwhile, cook noodles.
Add peas and noodles to vegetables.
Makes 8-1 cup servings.

    When I made this the first time it was very BLAND! The second time I substituted Rotelle for half of the tomatoes and added bell pepper, garlic and twice the amount of onion called for,also used some kosher salt and some pepper. Great base of a recipe for one to make it to their own liking, I did! - 6/10/09

    All goulash is not the same. My Mom use to make a goulash with ground beef, tomatoes and juice, salt and pepper and elbow macaroni. I make it with ground turkey.
    Here is the def. of Goulash. Also called Hungarian goulash. a stew of beef or veal and vegetables, with paprika and other seasoning.

    Great recipe. I used ground turkey, paprika, garlic, onions, a bag of mixed veggies, and all of the above recipe items, extra spices. I added the noodles in uncooked and they absorbed the extra liquid. Then I reread the recipe, should have add the pasta cooked! But it turned out just fine. - 8/20/08

    A little bland and watery (you could try leaving out a cup or so of water)... I added lots of fresh ground black pepper and some garlic powder and a little bit of seasalt. It was better the next day when we had the leftovers for lunch! - 3/12/08

    GOULASH IS defined as a stew of beef or veal and vegetables, with paprika and other seasoning. SO THIS RECIPE CAN BE CALLED GOULASH AS WELL AS YOURS, IT IS ALL IN WHAT YOU MAKE IT. Great recipe, Cathy! - 2/16/08

    I made this exactly as the receipe states. It was a very hearty meal. Next time I would add some Italian seasoning, it was a little bland. - 1/5/09

    I subsituted the beef with ground turkey, used tomato sauce instead of water and added bell peppers and some garlic. My husband and I enjoyed it this way (and he hates carrots ... lol). - 8/20/09

    I always include this tip in hamburger recipes. To turn the cheapest hamburger into 97% lean burger with the same nutrient value...after browning boil the burger for a few minutes then rinse well. Replave the fat flavor with seasonings. It isn't hard to get used to! - 8/24/09

    This is also known as "Poor man's soup" or "Yankee Doodle Macarooni". Instead of the water I add diced tomatoes, small can of tomatoe sauce and small can of tomatoe paste per 1 lb box of noodles. Being that I came from a PA dutch family background we always ate it with butter and molasses bread. - 8/21/09

    I used ground turkey and added boullion, salt, pepper and paprika. It was very good! The funny thing is that my husband liked the taste very much, but vehemently protested that it was not goulash! LOL! It turns out that it is not like HIS MOTHER used to make when he was a kid. - 8/20/09

    I love recipes like this where you can play around with them and almost nothing you do is wrong. Even though my mother had a particular way of making "goulash" I always understood it to just be a mix of meat & veggies of some sort. - 8/20/09

    The Hungarian/Transylvanian goulash and paprikash I grew up with had dumplings inside the stew, which is possibly not figure-friendliest version ever (although delicious! and with sour cream, yum!), so this is a good alternative. - 8/20/09

    This sounds good. My Goulash recipe is, 1lb lean gnd beef, 1 small onion, browned and drained, add 1 TBS Chile powder, 1 can w/k corn with liquid, 1 small can tomato sauce, 1 TBS butter, 1 can whole, diced, or rotel tomato with juice. Add 2 cups WW macaroni, 1 cup water, simmer till mac is done. - 6/10/09

    I made this i took the peas out and used very lean roast meat instead of ground beef using left overs . aslo I dressed it up with some green chili's and a little less liquid or it to me would be soup..but great basics - 8/19/08

    This is what I would call an American Goulasch! In Germany we would make this with stew meat and put it over either pasta, rice or potatoes. Sometimes we might add bell peppers and paprika, but there are so many variations, diffeent not only from region to region, but from family to family. - 8/19/08

    It's really good, but I based on comments I added in a can of diced tomatoes and green chilis - really makes it spicy. Next time, though, I'd leave out a cup of water, it's too watery for me. - 2/25/08

    I think this recipe tries to incorporate too many veggies... My dad makes this with a pound of ground beef, 2 cans of tomato soup, refill that same can half way with water, one green bell pepper, one onion, elbow pasta, and chili powder. - 1/9/14

    Nice one dish meal but more a stew than goulash. Goulash (gulyas) in my kitchen is stew beef, onions, potatoes and perhaps carrots flavoured with hot paprika and caraway seeds. It is searved as is or can be thinned and served as a soup. - 9/15/10

    This was a "bare bones" recipe -- this is where you START. Seasonings, like garlic and paprika, can certainly be added (in my house, garlic is almost a vegetable, not a seasoning!) to enhance the flavor; but the BASICS are here.     I substituted 92% lean chuck steak and cooked in slow cooker with the tomatoes, onion, and paprika until the meat fell apart, then added the other veggies to simmer and get al dente. It is more traditional style and oh so satisfying! - 9/15/10
