Ingredients

1 tbsp olive oil
2 tbsp finely chopped onion
1 cup lentils, rinsed
3 cups water
1 can (10 ounces) diced tomatoes
1/2 tsp minced garlic
1 cup long-grain white rice
1-1/2 tsp grated fresh ginger
1 tbsp curry powder
2 tbsp freshly squeezed lemon juice
2 tbsp chopped fresh cilantro
Directions
Heat olive oil in large, heavy saucepan or skillet.
Add onion and cook over medium-low heat until onion is softened but not browned, about 2 to 3 minutes.
Add rinsed and drained lentils and water.
Cover and bring to a boil, then reduce heat and simmer for 10 minutes.
Add tomatoes with juice to the pan.
Stir in the garlic, rice, ginger, and curry powder and cook covered 15 to 20 minutes or until lentils are softened but still somewhat firm, or done to your taste.
Add more water as needed so mixture doesn't dry out.
Remove from heat and stir in lemon juice, garnish with cilantro.

Just made a pot of this and loved it. I had to sub powders for garlic and ginger, omitted the onion, used brown rice, and it turned out delicious! Those who said it wasn't salty enough maybe need to cut back? I eat very little salt and this tasted great to me. Great high fibre side for meat dishes! - 7/1/09

For accurate calorie count, it seems one must use 1 cup pre-COOKED rice, or much less uncooked rice. Made with 1 cup UNCOOKED rice, the calories/1 serving is about twice as much as listed. 1 cup uncooked rice=675 cal, so each serving would have 110 cal just from the rice, +more from the lentils,etc - 6/27/13

Had this for dinner tonight. I made a few changes, based on the ingredients I had. Instead of canned tomatoes I used 1lb fresh, instead of rice I used a can of brown chickpeas and the only lentils I had were red, which go mushy when cooked. I ended up with a lovely thick almost-soup - delicious!!! - 3/27/12

Great low salt recipe! I used "no salt added" tomatoes and realized halfway through eating it that I forgot to add the lemon! Definitely made a difference. I omitted the cilantro though. Lentils were a little under cooked for my taste, so I would have simmered another 3-4 minutes. Rice was perfect. - 8/17/10

I loved this! I made it for myself and my 10 y/o son (a very picky eater). He has a tendency to add ketchup to everything, so I added ketchup to add some flavor for him, it turned out really good! Leftovers were great the next day for lunch at work, I will definitely make this again. Thanks! - 12/16/08

I replaced the white rice with brown and the cilantro with parsley. Also realized mid-recipe I didn't have any curry! But still delicious. Added a pinch of salt & pepper & dash of Frank's Red Hot to my bowl for more flavor. YUM!! My very picky 8 year old even liked it - without the Red Hot. - 3/27/08
