Ingredients

    1 tbsp olive oil
    2 tbsp finely chopped onion
    1 cup lentils, rinsed
    3 cups water
1 can (10 ounces) diced tomatoes
    1/2 tsp minced garlic
    1 cup long-grain white rice
    1-1/2 tsp grated fresh ginger
    1 tbsp curry powder
2 tbsp freshly squeezed lemon juice
    2 tbsp chopped fresh cilantro

Directions

Heat olive oil in large, heavy saucepan or skillet.
Add onion and cook over medium-low heat until onion is softened but not browned, about 2 to 3 minutes.
Add rinsed and drained lentils and water.
Cover and bring to a boil, then reduce heat and simmer for 10 minutes.
Add tomatoes with juice to the pan.
Stir in the garlic, rice, ginger, and curry powder and cook covered 15 to 20 minutes or until lentils are softened but still somewhat firm, or done to your taste.
Add more water as needed so mixture doesn't dry out.
Remove from heat and stir in lemon juice, garnish with cilantro.

Just made a pot of this and loved it. I had to sub powders for garlic and ginger, omitted the onion, used brown rice, and it turned out delicious! Those who said it wasn't salty enough maybe need to cut back? I eat very little salt and this tasted great to me. Great high fibre side for meat dishes! - 7/1/09

I really loved this and love it's versatility. I tried the garam masala and loved it, but would try curry too. Will also try adding some cooked chicken to simmer in the spices and tomato. Looking forward to trying lots of variations. I also add spinach for an added boost! - 1/16/09

I come from India. And this is almost a staple diet for some of us. Love it. Thanks Paula for sharing. One option is to pressure cook the lentils - with a ratio of 1:1 Lentils 1 Water 1. You can try this with Kidney Beans as well - dont know how it will affec the calories though :-) - 3/27/08

THis was flavorless until I added some vegetabel bullion. Then it was OK; however; it improved with age. So I would make it again with a few adjustments to the recipe and would wait at least 24 hours before I ate it. - 3/9/08

I would love to make this, but would prefer to use brown rice. I see several comments saying it needed more flavor,so I would add more seasonings..not salt. - 3/27/08

Yum! I used vegetable bullion when I was cooking my lentils, an didn't have canned tomatoes, but it was great anyway! I used brown jasmine rice instead of white rice. - 11/26/07

Where's the salt? This was tasteless. When I added quite a bit of salt to the finished product, it wasn't half bad. I'll probably make again adding a tsp of salt. (admittedly I used fresh tomatoes. Does that make a difference?) - 8/4/07

For accurate calorie count, it seems one must use 1 cup pre-COOKED rice, or much less uncooked rice. Made with 1 cup UNCOOKED rice, the calories/1 serving is about twice as much as listed. 1 cup uncooked rice=675 cal, so each serving would have 110 cal just from the rice, +more from the lentils, etc - 6/27/13

Had this for dinner tonight. I made a few changes, based on the ingredients I had. Instead of canned tomatoes I used 1lb fresh, instead of rice I used a can of brown chickpeas and the only lentils I had were red, which go mushy when cooked. I ended up with a lovely thick almost-soup - delicious!!! - 3/27/12

Great low salt recipe! I used "no salt added" tomatoes and realized halfway through eating it that I forgot to add the lemon! Definitely made a difference. I omitted the cilantro though. Lentils were a little under cooked for my taste, so I would have simmered another 3-4 minutes. Rice was perfect. - 8/17/10

Awesome recipe! Lentils and rice need way more cooking then the recipe called for but then again I live in Denver so maybe it's altitude. We added some celery too just for crunch which was great. Will totally make this again! - 8/6/10

This is definitely a staple for me! Love the addition of curry powder and cumin. I usually add spinach, onions, carrots, and sweet potatoes to this as well. Instead of mixing in brown rice, I put this on top of the rice. Yum-o! - 12/23/09

I loved this! I made it for myself and my 10 y/o son (a very picky eater). He has a tendency to add ketchup to everything, so I added ketchup to add some flavor for him, it turned out really good! Leftovers were great the next day for lunch at work, I will definitely make this again. Thanks! - 12/16/08

This was pretty good, though I'm a person who enjoys more kick in her curry. I put in some cumin, about three times the garlic, some salt and a bit more curry powder. After that, it was hard to stop eating this. - 4/2/08

Great for even meat lovers. Easy, quick to make. Added 1 tsp salt. Not a curry and ginger fan, so added only 1 tsp of each. Lemon juice makes it. Served with a dollop of light sour cream and cornbread. DH had seconds. - 3/27/08

I replaced the white rice with brown and the cilantro with parsley. Also realized mid-recipe I didn't have any curry! But still delicious. Added a pinch of salt & pepper & dash of Frank's Red Hot to my bowl for more flavor. YUM!! My very picky 8 year old even liked it - without the Red Hot. - 3/27/08
