Introduction

A fabulous fish dinner, even better when served with whole grain rice. A fabulous fish dinner, even better when served with whole grain rice.
Number of Servings: 4

Ingredients

    1-1/2 lbs red bell peppers, stems removed, cut into quarters and seeded
    1/2 cup slivered almonds, toasted
    1/4 cup olive oil
    2 tbsp balsamic vinegar
    1-1/2 tbsp tomato paste
    1/4 tsp cayenne pepper
    4-6 oz flounder fillets

Directions

For the sauce, arrange the bell peppers skin side up on a baking sheet.
Broil until the skin is blistered an charred.
Let cool and peel off blackened skin.
Combine the bell peppers, almonds, olive oil, vinegar, tomato paste and cayenne pepper in a food processor. Process for 1-2 minutes until the almonds are ground.
Heat the sauce in a saucepan until warm.
For the flounder, bring a skillet of salted water to a simmer.
Add the flounder.
Simmer, covered for 5 minutes until fish is opaque turning once.
Remove and drizzle with warm sauce.

    Why is the flounder simmered? Wouldn't broiling be better? I'm guessing the idea is to do a pseudo-poaching of the fish; but poaching is very bland unless done with herbs and garlic. So I'm wondering why you would simmer a VERY bland fish to begin with. - 8/15/08

    This sounds great, and I would think we could use it for other types of fish, chicken, etc. I might use green chiles instead of cayenne pepper - I like the flavor better. And I will use the instant brown rice. - 8/15/08
