Ingredients

    1/2 cup chopped onion
    1 clove garlich chopped
    1 tsp Italian seasoning
    1/4 tsp black pepper
    1 Tbsp Margarine
    1 16oz container 1 percent cottage cheese
    1 10 oz pk frozen chopped spinach cooked and drained
    1/2 cup egg beaters
    1 pkg barrilla manicotti shells cooked drained and cooled
    1 jar of Ragu sauce

Directions

In a large skillet sautee onion and garlic and seasoning/pepper in margarine until tender. Remove from heat. Mix together cottage cheese, spinach, parmesan, and egg beaters. add onion mixture and stir together until combined. Spread some sauce on the bottom of a 13x 9 " pan. Fill each manicotti shell some chesse mixture and arrange on the sauce. cover with remaining sauce and cover with foil. Bake in a 350* oven for 35-45 minutes until bubbly and hot. Top with additional parmesan if desired.

    Using cottage cheese made me nervous, but the idea of having low fat, low cal stuffed manicotti was enough for me to have to try it. it was amazing!!! couldn't even tell that it wasn't ricotta! - 5/27/11

    Incredible!
