Ingredients

2 cans chunk light tuna in water, drained
1 can white beans or chick peas, drained and rinsed
1 red bell pepper, diced
1/4 cup red onion, diced
1 tbsp olive oil
juice of 1 lemon
Optional: Parsley, tomatoes, spinach
Directions
1. Mix ingredients and chill in the refrigerator for at least 4 hours.
2. Serve on a bed of greens.

I wouldn't call this gourmet fare, but it was very good for a quick weeknight dinner. I made these adjustments: added a squeeze of lemon juice, rinsed the beans, and added just a touch of kosher salt and fresh ground black pepper. We had our greens as a side salad and ate this on bruschetta. Yum. - 7/21/09

I used the garbanzo beans as suggested by another and used half of orange & yellow pepper as I had those on hand. Added granulated garlic and pepper and some sea salt and it was great! Next time I think that I will try it with Old Bay Seasoning. The combinations are endless Thanks for the basics. - 7/9/09

it looks easy and sounds great i love tuna and beans, but i will have to ruinse the beans for lower sodium for my boyfriend, i had garbanzo *chick peas* beans but my boyfriend opened them up thinking they were butter beans and threw them away Ugh so we will be getting some more beans for this - 6/29/09
