Introduction

I needed a fast and easy after school cookie for the kids so experimented. Not only did the kids adore it, it has won an award and I am constantly asked for the recipe! Number of Servings: 24

Ingredients

    1 C. Sugar
    1 C. Peanut Butter
    1 Egg

Directions

*Pre-heat oven to 350.
*Mix all Ingredients
*Gather by eating teaspoonfuls, roll into ball, place on pan
*Use a fork to creat a criss cross pattern (you can roll in Sugar before this step, but personally that makes it to sweet for me)
*Place in oven for 6-8 min. They will still seem undercooked...take them out and let them rest for at least 5 min before removing from pan to a cooling rack. Keep a very close eye on them because they will burn easily!

    Excellent recipe. I used 1/2 a cup of sugar and added a small handful of chocolate chips & baked for about 7 minutes. Yummy. - 9/12/10

    This is a great recipe for a gluten free diet, as one of my coworkers has celiac disease. If I have them, I chop a few peanuts and press them onto top. I make these in the toaster oven if I dont mind more batches. - 9/8/10

    I've made these several times and they've always turned our great. I use a little less sugar, natural peanut butter, and let the batter sit for a bit to make sure the sugar incorporates well. - 10/3/10

    This recipe is so easy to put together & the result is a great looking cookie! I had a recipe like this in the past and lost it, I'm so thankful to find yours! I broke the cookies down into 36 servings...but calculating for W.W., the points value remained the same as your 24 serving size:2 points - 9/8/10

    These cookies are extremely quick and easy to make, which makes them a hit at my house. My kids did all of the work, and were eating them within 30 minutes of decided to make cookies (including looking up the recipe). I think I will try them with chocolate chips next time as someone else mentioned. - 6/17/11

    This recipe is very good! I replaced the sugar with Splenda and although the cookies are a little more brittle they are still very good. I ate two and was very satisfied. Plus it knocked about 20 calories off the per cookie count.. Thanks, will definitely repeat! - 10/10/10

    Sorry to say these cookies were a disappointment. They fell apart after baking and took about 20 minutes to bake. I wish I Would have rolled them in sugar because it would have helped.Also maybe Jif would be better with this recipe since it is a sweeter PB. Will stick with my mother's recipe! - 6/21/13

    I didnt have a lot of luck on this one, I dont know if it was because I made them in a Pyrex pan or what, but I had to cook mine for about 20 mins, because they were just completly raw otherwise. My sister and daughter liked them, but I wasnt a fan of the texture, felt kind of grainy. - 12/10/12
