Ingredients

1 LBS Extra Jumbo Shrimp
4 OZ Claw Crab Meat
2 SVG Double Fiber Bread Crumbs
1/4 C Egg Whites
1 Small Diced Tomato
1 1/4 TSP Seafood Seasoning
Directions
1 Serving = approx 3-4 shrimp.
This recipe will make 5 servings.
Preheat oven to "Broil" temperature. and grease a large cooking sheet.
In a bowl, mix the Crab Meat and the Double Fiber Bread Crumbs and egg whites. Mash them together really good.
Be aware when you go shopping that there is Claw Crab Meat, Lump Crab Meat, and Specialty Crab Meats. Claw Crab Meat is less expensive and is fine for this recipe.
Use Egg Whites because they are cholesterol free and seafood has enough natural cholesterol.
Nature's Own Double Fiber Bread gives the family a tasty boost of Fiber. Always on the lookout for how to fit fiber in our diets!
Remove the shell and devein the Extra Jumbo Shrimp. It is o.k. to leave the tail end on for looks. Please search the inet for pictures of deveining.
Most shrimp sold at the grocers is already deveined. Deveined shrimp is slit down the back and missing organs.
*To devein the shrimp with a small utility knife, make a shallow cut down the back of the shrimp to expose the vein. Once the vein is exposed, pull the intestine out with the knife, a toothpick, or your fingers.
Once the shrimp is deveined, this leaves a slit down the back of the shrimp. Rinse the shrimp off and put them on a cooking sheet that has been sprayed down with cooking spray.
Stuff 1/2 TBS of the crab meat/ bread crumb mixture in to the slit of each Extra Jumbo Shrimp.
Sprinkle the seafood seasoning over each shrimp.
Toss 2 pieces of diced tomato on top of each piece of shrimp.
Place tray in the part of the oven closest to the Broil Heat and cook for 5-6 minutes when the shrimp turn color. Be careful not to overcook or the shrimp will get tough.
The shrimp can be put in to a tupperware container and frozen for future meals. Simply remove the frozen Baked Crab Stuffed Extra Jumbo Shrimp from the freezer and microwave with a damp paper towel over the container.
Time will vary depending on your microwave but should be approx 1-2 minutes. Basically you are microwaving them until they thaw and shrimp do microwave well. You can over cook them though so the first time, you may want to do a test run with just one shrimp.
I like to serve this recipe with a mixed spring greens salad with dried cranberries and lemon juice for dressing on the salad.
This recipe goes well with steak as part of a "Surf & Turf" meal.
