Ingredients

    2 small tortilla(s), corn
    1 tablespoon salsa
    2 tablespoon cheese, cheddar, sharp, reduced-fat, shredded
    1 dash(es) cooking spray, to coat skillet
    1/2 cup(s) egg substitute

Directions

1. Top tortillas with salsa and cheese. Heat in the microwave until the cheese is melted, about 30 seconds.

2. Meanwhile coat a small nonstick skillet with cooking spray. Heat over medium heat, add egg substitute and cook, stirring, until the eggs are cooked through, about 90 seconds.

3. Divide the scrambled egg between the tacos.

Makes 1 serving

    So quick and delicious! I threw in some onions as well. Usually I would add some taco seasoning to my eggs but the salsa really kicked up the flavor of this dish. - 4/19/11
