An easy grab-n-go breakfast or snack! An easy grab-n-go breakfast or snack!
Number of Servings: 12

Ingredients

    12 large eggs, beaten
    1 1/2 to 2 cups cheddar, shredded
    1 tsp garlic powder
    1 tsp onion powder or 1 small onion, chopped
    S & P to taste

    Add additional ingredients such as sausage, green chilies, bacon, veggies, etc. The possibilities are endless!

Directions

Preheat oven to 350* F. Grease muffin cups. Combine all ingredients & mix well. Spoon 1/4 c. of egg mixture into each muffin cup. Bake in preheated oven for 15-20 minutes until eggs are set or until each "muffin" tests done.

Yields 12 muffins.

    I use low fat turkey sausage or turkey bacon. Crumble sausage while cooking. Crumble bacon after cooking. Set aside. Soften vegies (i.e. mushrooms, zuccini, onions, garlic, green onions) I sprinkle some ground flax seed on vegis while cooking. Reduce # of egg yokes for an extra healthy option. - 10/15/09

    Perfect for my daughter who likes to sleep in till the last minute, then has to go without breakfast. Microwaving for 15 seconds makes them perfect - moist and cheesy! - 6/25/09

    Perfect for the on-the go lifestyle. I made a batch - packed them in a container and hit the road. They warmed up nicely in a hotel room microwave (20 seconds) Thanks for sharing ~ - 11/2/08

    Very Good
    Great instructions; works out perfect. So easy to make. I added 1 c of crumbled bacon instead of the seasonings. Hubby loves having them handy for a quick breakfast, and they can be shared with the dog who needs to gain a few pounds. - 8/17/14

    I ADDED TURKEY SAUSAGE AND PUT HOMEMADE SALSA ON THEM. ALSO TRIED WITH A HALF SLICE OF PEPPERJACK CHEESE. HEAT IN THE MICROWAVE 30 SECONDS. FABULOUS!!! - 1/8/13
