Introduction
These “mashed potatoes” taste just as good as the real thing, but they’re much lower in carbs! These “mashed potatoes” taste just as good as the real thing, but they’re much lower in carbs!Ingredients
- 6 cups of chopped cauliflower (fresh or frozen)
- 1 1/2 oz. Smart Balance spread, melted
- 1 1/2 oz. half and half (or fat free half and half)
- salt
- white pepper
Directions
1. Heat cauliflower with an inch of water in a microwave safe bowl until tender.
2. Mash cauliflower with spread and half and half until at the desired consistency. Add salt and white pepper to taste.
Serves 4.

Decades ago Mom made a hamburger cassarole in a pie dish using mashed cauliflower instead of potatoes as the "crust" for the bottom and sides. My brother hated cauliflower & never knew the difference. The secret? Cook the cauliflower as soon as he was off to school and thoroughly air out the house. - 1/4/08

I used this recipe but used 1/2 head of cauliflower, 2 tablespoons of grated parmesian cheese (not the powdered kind) and added 1/8 tsp. of garlic powder and 1 Tbs. SMART BALANCE . Steamed cauliflower in steamer (5 min.) Put rest of ingrediants in food processor. YUM! One of our favorite dishes! - 1/19/10

Half and Half is cream, or rather half cream and half milk. It's what a lot of people/restaurants use in their coffee, instead of just milk. It's thicker than milk, so it would help thicken the cauliflower consistancy. I've made this before and it's awesome. I agree, a little garlic is great! - 1/4/08

Steam 1 lb cauliflower (frozen) using water with a bay leaf in it. Reserve about 1/4 cup of the water. Mash the cauliflower with 2T butter & 2 oz reduced fat cottage cheese, add bay water to desired consistency, S&P to taste - 2/9/11
