Introduction

These “mashed potatoes” taste just as good as the real thing, but they’re much lower in carbs! These “mashed potatoes” taste just as good as the real thing, but they’re much lower in carbs!

Ingredients

    • 6 cups of chopped cauliflower (fresh or frozen)
    • 1 1/2 oz. Smart Balance spread, melted
    • 1 1/2 oz. half and half (or fat free half and half)
    • salt
    • white pepper

Directions

1. Heat cauliflower with an inch of water in a microwave safe bowl until tender.



2. Mash cauliflower with spread and half and half until at the desired consistency. Add salt and white pepper to taste.



Serves 4.

    When i make this I use 2 wedges of laughing cow herb and garlic and throw it in the food processor. I don't need any cream or butter. This cuts the already low calories by around half! - 5/8/09

    I've made this before and love it. A fairly large serving is so low in calories. For those of us on the Weight Watcher diet plan, it's very low point. I sometimes make it with 1/2 cup of fat free sour cream and 1/4 cup of grated parmesan cheese - also good. - 1/4/08

    I have made this twice now.The first time, I SIMMERED FRESH cauliflower. I didn't have Half n Half, so I used skim milk and grated a little cheese in. The second time, I STEAMED FROZEN cauliflower, and used FF Half n Half with a bit of grated cheese. I liked FRESH best. - 3/12/08

    I, too, have been making this for a long time. The only thing I do differently is use low fat buttermilk and steam some garlic cloves with the cauliflower. I "mash" by throwing all in food processor. YUM!! - 1/9/08

    It is a great recipe....I put the cauliflower in the microwave and use the fresh vegetable setting...when done put it in the food blender with pepper, 1 T of butter nad salt to your taste....blend the heck out of it so the consistency is what you like and EAT! - 1/7/08

    Decades ago Mom made a hamburger cassarole in a pie dish using mashed cauliflower instead of potatoes as the "crust" for the bottom and sides. My brother hated cauliflower & never knew the difference. The secret? Cook the cauliflower as soon as he was off to school and thoroughly air out the house. - 1/4/08

    I used this recipe but used 1/2 head of cauliflower, 2 tablespoons of grated parmesian cheese (not the powdered kind) and added 1/8 tsp. of garlic powder and 1 Tbs. SMART BALANCE . Steamed cauliflower in steamer (5 min.) Put rest of ingrediants in food processor. YUM! One of our favorite dishes! - 1/19/10

    I added 1.5 oz FF cream cheese and halved the half and half. Delicious... although I need to find a better mashing method... came out the texture of coleslaw, which isn't quite what I had in mind! :) - 1/28/08

    Half and Half is cream, or rather half cream and half milk. It's what a lot of people/restaurants use in their coffee, instead of just milk. It's thicker than milk, so it would help thicken the cauliflower consistancy. I've made this before and it's awesome. I agree, a little garlic is great! - 1/4/08

    Nothing like a tiny bit of minced garlic to really add some taste to this. Love the recipe but does not satisfy a need for mash potatoes. With a little bit of imagination, this recipe is a great side dish. Sprinkle with a little parmesean cheese. - 1/4/08

    I really liked this but cooked the cauliflower in WAY too much water. After zipping it through the food processor I wrapped in cheese cloth to drain a bit. Mixed in 1/4 cup low fat sour cream, pat of butter, salt and pepper and reheated - delicious! - 3/28/10

    I also use light Laughing Cow in my Cauliflower Mash. No other ingredients necessary. I use a comination of the Garlic Herb flavor and Chipotle flavor to give it a little smoky kick! YUM! - 1/27/12

    Variation based on smashed potatoes, about 20 calories less per serving:
    Steam 1 lb cauliflower (frozen) using water with a bay leaf in it. Reserve about 1/4 cup of the water. Mash the cauliflower with 2T butter & 2 oz reduced fat cottage cheese, add bay water to desired consistency, S&P to taste
