Ingredients

    2 medium potatoes cut into "french fry" strips
    2 egg whites
    season to taste:
    ( my favorite is garlic, Mrs.Dash table Blend, a little cayenne and paprika...)

Directions

Preheat oven to 450* (a little less if you want them less crispy). Spray a cookie sheet with cooking spray. Dip cut up potatoes into egg whites and place on cookie sheet. Place into oven for about 20 minutes- more or less- you really have to watch them because they can burn. Take out and enjoy!

    I will definitely make this again. I think they get a little crispier (I love crispy) if you put the potatoes on cooling racks and then put the racks on the cookie sheet so that the heat can circulate more freely. - 9/13/11

    I don't eat eggs so I was a little nervous to try this out. But I have to say I was pleasantly surprised! I put the egg whites in a Ziplock and added the potatoes. It was easy and yummy!! - 9/15/11

    Very Good
    I used turnups to push the nutritive level up and the carbs down. Also you could make a mash of potatos, egg whites, turnups and rudabagas. Push them through an extruder attachment to your stand mixer and freeze till solid (about 20 - 30 min.).Don't over freeze or store for a long period. McD style - 9/14/11
