Ingredients

    1 lb. uncooked chicken breast
    1 package (8 oz) fat free cream cheese, cut into cubes
    1 can (4.5 oz) chopped green chiles
    12 white corn tortillas (mission brand)
    2 cans (10 oz each) Green chile enchilada sauce
    1/2 cup Kraft Mexican Style Shredded Cheese
    1.5 cups Shredded Mozzarella Cheese (Part Skim)

Directions

Makes 6 servings of 2 enchiladas each

1. Heat over to 400 degrees F. Lightly grease 13x9 inch glass baking dish.
2. In 10 -inch nonsitck skillet, cook chicken over medium-high heat, stirring occasionally, until no longer pink in center (about 10 minutes). Shred chicken, add cream cheese & chopped chiles; reduce heat to medum. Cook and stir until blended and cream cheese is melted
3. Spoon chicken filling onto tortillas; rollup and place seam sides down in baking dish. Pour enchilada sacue over top; sprinkle with Cheese. Bake 15 to 20 minutes or until hot and cheese is melted

    My favorite! You can be lazy, and layer it instead. A bit of sauce on the bottom, a layer of tortillas, then chicken, tortillas again, and top with the rest of the sauce, then finish with cheese. Not as pretty, but simple. - 11/3/08

    This recipe was DELICIOUS. My father is very picky and he loved it. I changed to flour tortillas and added some black beans (for extra fiber), tomatoes, and onions. They all added awesome flavor. I will definitely make this again. - 7/4/10

    Used 1/2 Mozza. cheese and 1/2 Habanero Cheddar cheese that I get at an Amish cheese store. Did as others suggested: added1 can black beans, drained; 1 can Rotel w/chiles and some corn.

    Love this! so easy and delicious I seen in reviews a lot of peeps are having trouble with corn tortillas breaking up I didn't have this problem because I heat them in microwave before rolling about 15 seconds for 5 at a time, just don't make so hot they burn your fingers! - 6/6/16

    my tortillas split, so i ended up with mush instead of enchiladas. but it was very tasty mush, looks aren't important in this house, just so long as it tastes good. i could only fit 9 in a 13x9" pan though. - 5/13/10

    I replaced the corn tortillas for flour and used a can (drained) of Rotel in place of the green chiles and these turned out FABULOUS! Will make again! - 4/12/10

    It tastes great, but I think next time I'll use flour tortillas instead of corn (they fall apart while cooking) andjust one can of green sauce instead of two to make it a little drier. Great recipe! - 1/20/10
