Ingredients

    For the crepes:
    1 cup whole wheat flour
    2 large eggs
    1/2 cup skim milk
    1/2 cup water
    1/4 tsp salt
    2 tbsp unsalted butter, melted
    For the filling:
    1 cup apple slices (peeled and sliced thinly)
    2 tbsp packed brown sugar
    1 tbsp cinnamon

Directions

To prepare the crepes:
In a mixing bowl, whisk together the flour and the eggs. Slowly add the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat.
Pour 1/4 cup batter into pan for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
For the filling:
Combine ingredients in a microwave safe bowl. Cook for 2 minutes, until apples are soft and the juice and sugar are caramelized. Spoon into crepes and serve hot.
Serving size: 2 crepes with filling.

    Really good! tip to other cheifs: to cook the crepes much better, mix the crepe ingredients in a blender, and set the batter in the refrigerator at least 1 hours before cooking. wisking will never give it the consistancy and texure that you want. - 8/17/10

    These are so good. Also made them with Strawberries, Blueberries & peaches. Used my crock pot for a family get together 2 years ago and had 4 different small cock pots with different fruit. Everyone had so much fun. - 5/4/20

    The recipe was good. I had to add about 1/2 cup of skim milk to get the consistency I wanted in the crepes. Next time I'll add some apple pie spice to the crepes to wake them up. (per RD0857 suggestion) - 1/11/11
