Ingredients

    1 boneless skinless chicken breast
    1/2 c. Stove top stuffing mix, divided
    1/4 c. hot water
    2 tsp. soft margarine
    nonstick cooking spray

Directions

Mix 1/2 cup stuffing mix, hot water and margarine in a small bowl. Set aside. Crush remaining stuffing mix and spread on a plate.

Slice a pocket in the side of the chicken (lengthwise), opening butterfly style. Place the prepared stuffing on chicken breast and fold closed. Spray both sides of chicken with nonstick cooking spray, roll in crushed stuffing crumbs and place on baking sheet.

Cook in preheated oven for 15-20 minutes at 350.

For a new flavor, try different flavors of stuffing, or add chicken gravy!

    The combination of breast and dressing was good. The chicken on its own was plain. We did cook it in cream of chicken soup for 50 minutes at 350 - 1/22/12

    I multiplied by 8 to make this for my family. I used toothpicks to hold the breasts together. I also had to cook it about 30 minutes and had stuffing leftover. I divided the extra stuffing evenly into muffin tins, sprinkled with chicken broth, covered with foil, and baked alongside the breasts. - 4/2/11

    I added a bit to this and it turned out great!! When the chicken was butterflied, I spread spagetti sauce and shredded mozza cheese, then the stuffing. I crushed the rest of the stuffing so that it was very small like bread crumbs. 1/4 C water in pan.
    I have been asked to make it again. Yeahhhh!!

    I made this last night with a twist on it.... I had to make 7 for my large family, so I baked them in a 9x13 pan with a can of cream of chicken soup in the pan...turned out great...even the kids liked it! - 5/24/10

    OMG....SOOOOO GOOD!!!!!! I filled the raw chicken with the stuffing, placed them in the pan, sprayed them with butter, and sprinkled all of the remaining stuffing crumbs over the chicken. Then I added 1/4 C of water around the edges. Mine came out PERFECT!!!! It wasn't dry at all. Thank you!!!! - 9/2/09

    I'd love some tips on how to keep the chicken moist yet crispy on the outside. I had to cook for 25-30 minutes to get it done, and it ended up being rather dry. I used the low sodium chicken flavored stuffing-- maybe next time I'll try the corn bread flavor. - 5/6/08

    You could fix this up to taste better, but as is I really didn't care for it. I would never again use the stuffing mix for coating, shake & Bake or bread crumbs would be much better. - 11/1/07
