I made this with out the corn and used red and yellow peppers and seasoned with a little of Ms Dash Southwester seasoning. I also served it over couscous. - 9/1/08

I would definitely add some black beans and switch the corn tortillas to multi grain. - 9/1/08

I made these with tempeh instead of seitan (it's just what I had on hand), and I put cheese on top (I'm not vegan), but I really liked them! It was a good use for my tempeh, which I didn't have any special plans for. :) - 8/18/08

I cut my Carbs and calories by using Mission Extra Thin Corn Tortillas since 2 equal 80 calories instead of the 116 in the recipe - 10/30/11

A nice dish. Simple to make, vegan and yummy. It wasn't quite spicy enough for me. I think the next time I make it I will add some jalapeno to the vegs. - 8/26/09

I love seitan - (pronounced say-tawn). It is wheat gluten with no animal ingredients. I use seitan quick mix or already formed/refriderated. I get mine from Wegmans. - 10/1/08

I'm going to use fresh corn because we have some from the garden and it is better fresh than frozen. - 9/1/08

Looks great, I'm going to try it soon. To all those who don't know what seitan is, it can be easily made by mixing wheat gluten with water and simmering, just Google, there are many recipes and youtube videos. - 7/16/11
