Introduction

Ingredients

    • 2 medium eggplants, halved lengthwise

    • 2 tablespoons vegetable oil

    • 1 tablespoon minced garlic

    • 1 teaspoon ground cumin

    • 1 tablespoon grated fresh ginger

    • 1/4 cup finely chopped parsley

    • 1/4 cup red bell pepper, chopped

    • salt and pepper

Directions

1. Heat oven to 400° F. Line a heavy baking sheet with foil.

2. Brush the cut sides of the eggplant with 1 tablespoon of the oil and arrange cut side down on the baking sheet. Bake until cut sides are browned and eggplant is soft (about 25 minutes).

3. Combine remaining oil and garlic in a skillet and heat over low heat until garlic sizzles. Stir in cumin and remove from heat.

4. Scoop out softened eggplant, chop finely and then add to skillet. Add ginger, bell pepper, and parsley. Stir mixture over low heat until blended. Add salt and pepper to taste.

5. Serve warm or at room temperature.

Serves 8.

    Love this! Try cooking whole eggplants in the microwave: pierce a few times with a small knife, place on paper towel, cook each one for four minutes on high power. (Time varies per microwave.) Let it rest, it will get soft. Comes out creamy & great for mashing up! OIL FREE! - 8/21/07

    I made this 4 times this summer and it was well-received by everyone. I wouldn't call it spicy, but it is tasty. I also put the eggplant in the food processor and found the texture to be better than just chopping it. Added some cayenne. Served with homemade pita chips. - 8/31/08

    I think next time I make this, I will just go nuts with the garllic. I added wasabi powder and tabasco sauce (I couldn't figure out what would give it really good flavor. When I added more pepper, it came alive a bit, but I think the key to this dip is tons and tons of Emeril-approved GAH-LIC!! - 11/15/08

    Suprisingly good. I tricked all my kids into eating the eggplant, by spreadingit on garlic bread and topping with mozarella cheese and then baked for 400 for 5 minutes to melt the cheese. I love to hide the veggies so they get eaten. They all enjoyed. For the hubby and I , I spread on pita. - 5/2/08

    I added cayenne pepper, used hot pepper oil instead of regular, cooked peppers with garlic and oil, and processed it in the food processor for a better texture. Definitely yummy! Great for lunch sandwiches! - 9/14/08

    I liked it...not having the exact ingredients,i.e, I had to sub garlic powder and didn't have ginger(so I used cayenne to give it the spice. I had to use quite a bit of salt because it was bitter. I'll definitely try it again and hopefully do better - 5/23/09

    I microwaved the eggplant, halved the recipe and adjusted the seasonings for my GERD, but this is great! It's close to a great dip I had when my mom took me to visit Greece...

    Sounds wonderful! I will definitely try this, but since it's summer time I'm going to try and cook the eggplant on the grill so I don't heat up the house.... And I love food spicy, so I will definitely be adding a little extra something to it for some extra zing! - 7/23/08

    This recipe is interesting. The cumin and ginger taste amazing together. I still added a dash of cayenne pepper and some feta cheese to make it a little more interesting. It's tough for me to get past the color, but overall the recipe is very good. - 6/11/08

    I just made this and it turned out a little chunkier than a dip. It does take some work to make, next time I will try chopping it in the food processor or blender to make it smoother. Also will add some onion & hot pepper flakes to spice it up a little more. Very flavorful as it though. - 11/3/07

    I love Middle East foods, esp. baba ganoush so I tried this. I doubled the parsley, fire smoked the eggplant, added more cumin and some liquid smoke. It still isn't quite spicy enough (we love spicy foods!), I'll have to tweak this recipe a little more to suit our taste but it's not bad as is. - 3/26/07
