This is delicious. I made it in a no fat version as I am following the Dr. Esselstyn/Dr.McDougall/Dr.Barnard no added oil approach to health. So I did not oil the pursue of the eggplant and I sauteed in water. Still absolutely delicious. Really lived the mixture of spices. A wonderful rich dip
I liked it...not having the exact ingredients,i.e, I had to sub garlic powder and didn't have ginger(so I used cayenne to give it the spice. I had to use quite a bit of salt because it was bitter. I'll definitely try it again and hopefully do better
