Introduction

Ingredients

    1 can white albacore tuna, drained
    1 tbsp light mayonnaise
    1 tbsp balsamic vinegar
    3 tbsp chopped onion
    2 tbsp sliced almonds (use garlic or other flavor, if available)
    2 tbsp shelled edemame, raw
    1/2 cup cooked spaghetti squash threads, chilled
    1 medium tomato, chopped

Directions

Mix mayonnaise and vinegar into tuna.
Add onion, almonds, and edemame to mixture and stir.
Mix in spaghetti squash. Chill.
Serve alone or over salad greens, topped with chopped tomato.

    I will give this a try--sounds yummy. I have found edemame (soybeans) in the frozen veggie section of mainstream supermarkets (the frozen ones are sometimes in the pod, sometimes it's available shelled). Edemame is really nutritious--high in protein & fiber! - 5/19/08

    In Colorado you can find fresh edamame in the prepared salad section of grocery stores. Maries is one brand. Costco also carries a fresh in the pod organic version. - 5/19/08

    I will try this. Sounds yummy and I love edemame. I have had it fresh in a Japanese restaurant, heated with salt, but I can only find it, even in the health food stores, as a frozen item. Has anyone ever seen it fresh in the pod for sale. - 5/19/08

    Edemame is a soybean and you shell it and eat the inside bean. It's hard to find in my area but Walmart does carry it pretty regularly. The recipe sounds like it has a lot of potential! - 5/19/08

    I have never made spaghetti squash before. It gave it a different texture. I made it in the evening and ate it the next day for lunch. It held up well and didn't taste runny like some tuna salads I left in the refrigerator in the past. - 1/18/08
