Number of Servings: 16

Ingredients

    - 6 tablespoons of butter
    - 1 cup - White Sugar
    - 2 - Eggs
    - 1.5Cups - White flour
    - 1/2 Cup - Milk
    - Grated Zest of 1.5 Lemons
    - 1/4 teaspoon - salt
    - 1.5 teaspoons - baking powder

    Glaze for muffins
    - 1 teaspoon of glaze per muffin - did exactly all 16 muffins

    - juice of 1 med. lemon - about 1/4 cup
    - 3 tablespoons of icing sugar

Directions

Preheat Oven to 400 degrees. In Bowl, cream together butter, sugar and eggs. Add in flour, milk, lemon zest, salt and baking powder. Mix Well. Bake for 15 minutes or until your tooth pick comes out clean. Meanwhile, make your citrus glaze by whisking together the juice of one medium lemon and icing sugar. When Muffins come out of the oven, prick the tops several times with a fork or toothpick and drizzle one teaspoon of glaze over the tops of each muffin.. Glaze should cover exactly all 16 muffins. Cool completely and enjoy with your favorite cup of tea!

    Beware of this recipe! Various ingredients were left out of the nutrition calculation.They have 148 Calories 5.2 grams of fat. 90 grams of sodium

    Needed to make something for a funeral tonight. Made these lemon muffins and they were absolutely fantastic. were fluffy and light like a nice cake texture. People there really enjoyed them and some went home with the recipe which I had copied - 1/17/18

    switched sugar for 3/4 C honey. Substituted my own freshly ground "soft white wheat" and omitted the glaze. Recalculated a more accurate nutrition chart (appx. 125 kcals ea.) SUPERB!!!!! (a keeper) Everyone LOVED them. - 1/30/13
