Not your average summer salad, this is a healthy take on a much higher calorie version served long ago at the Heidel House in Green Lake, WI. It works well instead of coleslaw or potato salad at a cookout or picnic. Ingredients

    1 pkg frozen peas, thawed
    1/4 cup mayo
    1/2 cup fat free yogurt
    2 medium celery stalks, diced finely
    Salt and pepper to taste
    1 tsp dry dill weed, or 1 tbsp fresh, chopped
    1/4 cup shredded parmesan cheese

Directions

Thaw and drain the frozen peas and put in a bowl.
Wash, dry and chop celery, addding to the peas.
Mix mayo, yogurt and dill weed (and salt and pepper to taste) till smooth, and combine with the pea/celery mix until the vegetables are well-coated.
Fold in shredded parmesan cheese, and refrigerate at least 1/2 hour to combine flavors.

    I think I'll be taking this one to the next picnic. It is very yummy. I used 1/2 kg of peas since the package size was not listed. I didn't let it sit before eating & it is just fine.

    I didn't think I was going to like this since the combo sounds interesting. I did add two things. I increased the amount of dill in the recipe and I added 1.5 cups of semi steamed chopped carrots. I preferred the dash of color. - 7/11/07
