Ingredients

    1 small salmon fillet
    1/2 cup orange juice
    1 tsp Dijon mustard
    fresh spinach leaves

Directions

In a small bowl mix together orange juice Dijon mustard to create a glaze.
Place the salmon on a microwave-safe plate.
Spoon the glaze over the salmon.
Put the citrus-dijon salmon in the microwave for about 10-15 minutes.
Check the salmon to ensure that it is thoroughly cooked.
Arrange the fresh spinach on a serving dish.
Lay the salmon on the fresh bed of spinach and add more of the citrus-dijon glaze for presentation. Yum.

    I added 3/4 tsp cumin and 1 TBSP chili powder to give this an extra kick - really great with a hint of the citrus coming through.
    Also broiled in the oven until done.
    Will make this again maybe next time cook it on the grill.

    Instead of using the microwave, I baked this in a regular oven at 450F for about 25 minutes. I turned out very nicely - 4/24/07

    I always microwave my salmon (4 oz. frozen) since I live alone. It only takes 4 minutes. I can't imagine what would be left of the fish after 15 minutes in the microwave! - 2/27/11

    I broil my salmon as it is faster, but the glaze is good. I've used lemon juice and dijon but never orange juice before. - 2/27/11

    I cannot even imagine putting in microwave and the salmon being moist after microwaving for 15 minutes. I will try the glaze but only in the oven. - 2/27/11

    For those who've never tried cooking fish in the microwave, please refrain from commenting until you try it.
    This was a great glaze for salmon. My wife (who is not a fan of fish) actually thought this was pretty good and agreed to have it again.
    I think the quick prep time impressed her.

    try heating about 1/2 inch of water in the plate to a simmer,
    then add the salmon - it should poach on HIGH in about 8 mins!

    I'm going to guess that the power on the microwave is set at 'bake' or some similar lower power. I know some things come out a LOT better when cooked on a lower power. They don't get the 'super-heating' that ruins some foods. - 9/20/11
