Ingredients

Olive Oil, 1 tbsp
Garlic, 1 clove
Onions, raw, 1 cup, chopped
Celery, raw, 1 cup, large-diced
Mushrooms, fresh, 1 cup, quartered
Green Bell Peppers, 1 cup, strips
Zucchini, 1 cup, sliced
Carrot, raw, 1 cup, strips or shredded
Water, tap, 3 cups
Acini di pepe, 1 cup
Red Lentils Dry, 1 cup
Canned Tomatoes, petite diced, 14 oz
Salt, 1 tsp
Pepper, black, 1 tbsp
Lemons, 1 fruit without seeds, quartered
Directions
Prep vegetables in advance, mis en place. In a saucepan, heat one tablespoon olive oil. Quickly saute the garlic and onion. When they BEGIN to get clear, with a touch of browning, add the celery and mushrooms. Give the pan a few flips, to coat everything with oil, and add salt and black pepper. Add water, and bring to a boil. When the water has come to a boil, add pasta, red lentils and lemon quarters. Stir, occasionally, until the pasta and lentils are cooked. IMMEDIATELY stir in the bell peppers, tomatoes, carrots and zucchini. Ladle into bowls, and garnish as desired. We discovered that McIlhenny Green Pepper Sauce takes this from "holy COW!" to "INCREDIBLE!"

Looks incredible :-) Can you tell me why (on the VB if you like so I see it) you add the last grouping of veggies at the very end and then pretty much serve them uncooked? - 4/14/11

Hi, Maddy; when you add the last group of veggies in, you're allowing them to cook on the residual heat of the rest of the recipe ingredients. I'm combining a lot of textures here, and that was just another set of them. You can add them wherever your little heart desires. God bless!
