Introduction

A delicious almost desert side dish with maple syrup, walnuts, & raisins A delicious almost desert side dish with maple syrup, walnuts, & raisins
Number of Servings: 2

Ingredients

    1.5c carrots, chopped
    1/4c walnuts, chopped
    1/8c raisins
    1/4c sugar free syrup
    1tsp cinnamon
    1/2tsp nutmeg

Directions

1. Boil carrots until tender.

2. Add remaining ingredients

3.Stir over low heat until syrup thickens slightly & carrots are coated.

4. SERVE & ENJOY


A nice side dish or light dessert.

    Excellent! I got a group of fussy old men to eat vegetables with this! I vary the recipe a little bit each time, e.g. with whole walnuts, with a shot of balsamic vinegar, a little cayenne, etc. - 12/25/14

    OMG! This was soo good! My kids and I just loved it! The only change I made was I used 1/2-tsp cinnamon and 1/4-tsp of nutmeg. It was wonderful! - 1/15/08
