Ingredients

Honey, .75 cup
Molasses, .25 cup
**Flax Seed Meal (ground flax), 2 tbsp
Water, tap, 2 fl oz
Pumpkin, canned, without salt, 1 cup
*Flour, white, 1.75 cup
Vanilla Extract, 1 tsp
Baking Soda, 1 tsp
Nutmeg, ground, 1 tsp
Cinnamon, ground, 1 tsp
Salt, .5 tsp
Cranberries, 1 cup, chopped
Cloves, ground, .25 tsp
Grapeseed Oil, .5 cup
Tips
Use the same cup to measure the oil and honey. If you do the oil first, the honey will slide right out.
Serve with a dollop of fresh whipping cream or Vanilla frozen yogurt.
Directions
Preheat oven to 350 degrees.
Combine the oil, honey and Molasses.
Add flax seed meal, water vanilla and pumpkin puree. Mix until well blended.
Combine all the dry ingredients and add to pumpkin mixture.
Stir in fresh chopped cranberries.
Pour mixture into a greased 9 X 5 loaf pan.
Bake for 50 minutes or until toothpick comes out clean.
Serving Size: Makes 18 .5 inch pieces

This was really tasty (though I like more cinnnamon) and moist, but with the honey and molasses it comes to a pretty high calorie count per piece, so I will look for lighter recipes in the future. Thanks anyway, though - if I weren't carefully tracking calories, I'd totally make this a lot! :) - 9/22/12

For anyone that thinks this is good for diabetics Please be careful! It has honey, molasses AND white flour. It may be safer for SOME diabetics if they eat more than a tiny tiny slice and carefully monitor their numbers but not safe for all. Please don't be fooled because it has no sugar in it - 10/10/12

I have an "original" pumpkin bread recipe I got from native Iowans almost 40 years ago. Anyone want it, e-mail me. It calls for 3 cups of sugar! So by comparison, this one is relatively sugar-light. This time of year, get a fresh pumpkin, steam it, squeeze out the pulp and use it instead of the can! - 10/9/12
