Ingredients

Vinaigrette
juice of half a large grapefruit
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
2 tablespoons olive oil
Salad
2 tablespoons sliced almonds, toasted
1/2 red onion, sliced thin
10 cups mixed baby greens
2 1/2 grapefruits, segmented

Tips
Soak the red onion in ice water for 15 minutes to take away any "sharp" taste.
Directions
Place the vinegar, and mustard in your salad bowl, then slowly whisk in the oil.
Place the salad ingredients in the bowl, then toss to combine. Serve immediately.

I cut it back to 1 serving and at last minute found I didn't have any Dijon mustard! Still the dressing with just the juice, balsamic vinegar and olive oil was really good! the salad was very refreshing on a hot day! I also left out the onion since I don't like it, but may try it with some spring - 7/20/16

I find when I make this, there's usually enough juice for the dressing if I catch everything that comes out when I peel and cut the sections. Never need to juice half a grapefruit for this.
And this is my favorite company salad! Be sure to add some red leaf lettuce to really up the color contra - 12/5/14

Something I didn't know .. if your on High Blood presure meds you can't/shouldn't eat Grapefruit.. it cancels out the meds in the liver.... soooooo... I switched out the grapefruit with orange slices... just as good... (look up Grapefruite and High Blood presure med on Google it will explain it) - 11/28/12
