Number of Servings: 3

Ingredients

1.5 lb baby bok choy (chopped)
    1tpsp e.v.olive oil
    3 cloves garlic, minced
1tsp garlic powder (for garlic lovers like me)
    3tbsp kikkoman lite soy sauce
1 tsp crushed red pepper (add more if you like it really spicy)
1/5 cup water (or chicken/veggie stock)

Directions

In a large stockpot (deep like the ones you boil spaghetti in) add the e.v.olive oil and heat to medium on the stove. Add garlic and lightly brown.. when browned throw in all of the bok choy and stir around a couple of times. Cover and let cook for about 3 minutes. Open and add soy sauce, garlic powder, and red pepper.. stir continuously for about 2 minutes and add water to make a lite sauce on the bottom of the pan. Stir for 2-3 more minutes or until all bok choy is tender. Serve in a bowl, scoop some sauce out of the pot and pour over for extra deliciousness!

enjoy!

I could live on this!! I can never find baby bok choy, so I always use the regular. I never add water or stock, because the bok choy gives off so much liquid while cooking, but I also add a splash of rice vinegar instead. Delish! - 1/12/11

Going to try this tonight. However, on the nutritional info. I question the calcium amount. Bok choy is very high in calcium. Using another listing for bok choy it came out to 22 on the calcium. This was soooooo good! I served mine along with orang honeyed chicken (another spark recipe). Yummy! - 5/12/09

This is becoming a family favorite. Anybody who loves spicy food but isn't too keen on veges should try it. We never cover it, though, so the bok choy stays crunchy. - 2/25/08

You can usually get baby bok choi at a local asian market. I find a lot of great spices and items for healthy cooking there and mine beats out supermarket pricing, so I shop there first. Baby bok choi is super easy to grow and a cold weather crop just like spinach. - 3/25/12

Very good side dish! I didn't have bok choy so I used broccoli, zuccini and mushrooms. Very flavourful! Will try adding stock instead of plain water next time. - 7/10/11

I followed the recipe exactly and we thought it was okay. The bok choy was tasty, but soggy. I would make it again, but would eliminate covering it and adding the extra water. - 1/6/10

My mom has been telling me to try bok choy for a while now and this recipe sounded a lot like her instructions so I tried it...and another vegetable for my menu planning....NIICE! I only traded a couple of dashes of worchestershire and rice vinegar instead of soy sauce (not on hand) and water. - 5/26/18

    I made some changes...
Added half an onion and chopped broccoli with garlic at beginning
Added soy, pepper And garlic powder with bok choy because cooking the choy for that long really kills it. Still added water. After a minute or two added a small amount (a sprinkle) of corn starch to thicken ev

Made it in a saute' pan and added sliced baby bella mushrooms;Made saute'ed tofu, and cooked brown rice separately. served it altogether, and it was DELISH! I'm now a fan of bok choy, and have found the "missing" ingredient in my Chinese cooking. Will make again as a "cook ahead" recipe. YUM - 3/13/14

The bok choy was really good; I'm just a wuss about spices. I cut down the red pepper by half. Husband loved it -- I just like a sweeter sauce. - 8/23/13

Very tasty, & light. I used mature Bok Choy, sliced as I would a celery stalk, as baby was not available. Made a great side dish - could add a protien & serve on rice for full meal. Will make again, hopefully with home grown bok choy. - 2/24/10
