Introduction

A delicious, simple cake! A delicious, simple cake!
Number of Servings: 10

Ingredients

    3 lemons
    100g plain flour
    100g margerine/unsalted butter
    130g granulated sugar
    50 ml milk
    2 medium eggs
    1/2 tsp baking powder

Tips

For the drizzle to soak into the cake perfectly, use a skewer to make 'holes' in the cake (about 6 holes) and then pour the drizzle on.

Directions

Preheat the oven to 180ºC/gas mark 4.
Beat together the eggs, flour, 100g sugar, butter, baking powder, the juice of one lemon and lemon zest until smooth in a large mixing bowl and turn into the prepared 1lb loaf tin.
Bake in the preheated oven for 35-45 minutes, or until golden brown.
While the cake is still warm, mix the juice of two lemons together with 50g sugar over a medium heat until the mixture thickens.
Pour over the cake and serve!

Serving Size: makes 10-12 slices

Number of Servings: 10
