Introduction

Fiber can be tasty! Fiber can be tasty!
Number of Servings: 15

Ingredients

    1 cup bran flakes
    1 cup whole wheat flour
    2/3 cup brown sugar
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    3/4 cup chocolate chips
    3 tbsp flax seeds

    1 egg
    1/2 tsp vanilla extract
    1/4 cup olive oil
    1 cup milk (2%)

Directions

Mix your dry ingredients together in one bowl, and your wet ingredients together in another.
If you're adding chocolate chips or things like fruit, its easiest to add them to the dry ingredients before you mix the wet and dry together - that way you'll be less likely to over mix the dough which would make your muffins feel more dense and heavy.
Stir the two mixtures together until things are nicely blended, and then spoon into a muffin with muffin liners (trust me, washing muffin pans isn't fun.)
Preheat the oven to 375*F and bake for 15-20 minutes, cool and gorge! - i mean.. enjoy!

Great recipe! Some suggestions to make it healthier is to use applesauce instead of egg (3 tbls = 1 egg) and I used soy instead of cow milk. This cuts out the cholesterol and lactose. Also use ground flax seed, not whole, as the nutrients are difficult to absorb from the whole seed. Nutritious! - 10/2/07

I used skim milk instead of 2% because that is all I had. I also cut the sugar in half since I don't like my muffins overly sweet. They were really good but a little salty - think I'll leave the salt out next time. - 4/2/07

Yummy!! I didn't have any flax seeds on hand, but instead threw in some wheat germ for an added punch. The chocolate hides the good stuff - my kids thought it was dessert! - 3/13/07

Great muffins! The slight changes I made were replacing the oil with 1 1/2 individual containers of unsweetened applesauce, used almond milk instead of 2%, flaxmeal instead of flax seed and added 2 tbsp of unsweetened cocoa powder! Moist and Delish! Will definitely make these time and time again! - 11/18/10

Great recipe. I will make this everytime I want muffins. I used skim milk with lemon juice, canola oil instead of olive but found the consistency a bit runny. I threw in about 1/2 cup of quick oats. I also used my mini muffin tin which yielded 36 two bite muffins. - 12/30/08

The flax seeds get stuck in your teeth! But these muffins are surprisingly delicious! I put a bit more chocolate chips in to make them extra sweet and gooey. They are so easy to make and very filling too! - 3/19/07

My husband and I agree these are absolutely delicious. We wouldn't mind these instead of the ever-favorite chocolate chip cookies. these things are amazing! I didn't have any flax seeds so I didn't add them, but these were simply delicious. - 3/14/07

Sooo delicious!!! Even my family loves them and they usually won't thought anything even remotely healthy. I groud half of the flaxseeds so they wouldn't be able to tell much and that way the seeds are absorbed better! - 2/15/15

This looks good and I will try it. My question is this: can you substitute applesauce for the oil, and if so, what are the proportions? Someone suggested substituting applesauce for the egg, but the real calories come from the oil. Anyone know? - 12/6/08
