Ingredients

1 cup bran flakes
1 cup whole wheat flour
2/3 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup chocolate chips
3 tbsp flax seeds
1 egg
1/2 tsp vanilla extract
1/4 cup olive oil
1 cup milk (2%)
Directions
Mix your dry ingredients together in one bowl, and your wet ingredients together in another.
If you're adding chocolate chips or things like fruit, its easiest to add them to the dry ingredients before you mix the wet and dry together - that way you'll be less likely to over mix the dough which would make your muffins feel more dense and heavy.
Stir the two mixtures together until things are nicely blended, and then spoon into a muffin with muffin liners (trust me, washing muffin pans isn't fun.)
Preheat the oven to 375*F and bake for 15-20 minutes, cool and gorge! - i mean.. enjoy!

Great recipe! Some suggestions to make it healthier is to use applesauce instead of egg (3 tbls = 1 egg) and I used soy instead of cow milk. This cuts out the cholesterol and lactose. Also use ground flax seed, not whole, as the nutrients are difficult to absorb from the whole seed. Nutritious! - 10/2/07

Great muffins! The slight changes I made were replacing the oil with 1 1/2 individual containers of unsweetened applesauce, used almond milk instead of 2%, flaxmeal instead of flax seed and added 2 tbsp of unsweetened cocoa powder! Moist and Delish! Will definitely make these time and time again! - 11/18/10
