Ingredients

    2 small Eggplant about 1lb each
    Non stick spray
    Seasoning

Directions

Preheat oven to 350 degrees.

While oven is preheating, slice eggplant into 1/4 inch slices (about 30 pieces for 2 sm. eggplant). Place eggplant on baking sheet and lightly coat with non stick spray. Add seasoning. Turn over and coat other side.

Bake eggplant for aprox. 30 minutes or until tender.

Makes 5 (5-6 slice) servings.

    I played with this recipe & added diced green onions, a sprinkling of parmesan, garlic salt, season salt, & diced mushroom & they ended up like mini pizza bites which my husband RAVED over. WE will keep making this over & over again. (We usually serve with spaghetti & sauce) - 4/14/08

    Yum! I am having this for dinner! I already have leftovers of onion, zuchinni, yellow squash, garlic, tomatoes, and basil that I cooked for dinner last night and will top the eggplant with a generous serving of that with a little parmesan cheese. - 9/2/09

    I fix eggplant this way and oven roast in winter, but in summer, hubby grills the eggplant slices while he is grilling our meat. Extra yummy and they come out tasting almost creamy! - 7/26/08

    O.K.
    Tried this last night...odd. If the slices were too thin and got a bit crispy, they were pretty gross. Then the thick ones were still chewy. I guess I need to cut them all the exact same thickness next time...if there is a next time. I was expecting greatness and was disappointed, but no big deal. - 2/3/11

    Delicious! I used italian seasoning for the seasoning. Mine were done quicker but maybe only because I had 1 eggplant. We served it with our ravioli dinner and put some of the tomato sauce on it. Husband and 6 year old son and I loved it, 4 year old daughter did not. - 6/14/10

    I coated the eggplant with some bread crumbs that toasted in the oven and gave it a little crunch. Yummy! - 5/14/08
