Introduction
This is a great low calorie portable lunch or dinner. On cold days I pop it into the school microwave for 15 seconds- which melts the parmesan and makes a nice warm treat! Ingredients

Chicken Breast- 70 grams
Hellmann's Light Mayonnaise - 1 TBSP
Parmesan Cheese- 10 grams (grated)
Artichoke Hearts - 50 grams (hearts of palm work too!)
Spinach- small handful (appox 8)
La Tortilla Factory, Whole Wheat Low Carb Tortilla- 2 tortillas
Directions
Take previously cooked chicken (I boil mine), and shred or cube. Chop artichoke into small easy to eat pieces and add to chicken in small bowl. Add cheese, and mayo and mix.
Place a small handful of spinach on each tortilla and scoop chicken mixture equally onto both. Lastly roll up tortilla and eat cold or pop into microwave for 15 seconds to melt cheese.
Makes 2 servings.
* To add extra flavor to this recipe ( this is how my family prefers it) boil chicken breast in water and low sodium chicken broth- it makes the chicken much better and it only has a slight calorie increase (10-30 depending on how much chicken you use).

This was a nice switch to just a plain old chicken breast. My one complaint is that it's quite bland. I added some garlic and onion powder to it, and then it still needed more seasoning, so I ended up dipping it in Dijon mustard. But with those twists, it was fantastic. I'll definitely make it again - 8/1/11

What a wonderful combination of ingredients! I changed the recipe some in that I didn't use mayonaise (not my favorite thing...) and added a touch more freshly grated parmesan. Overall, yummy. It was just a touch bland for me though. I might try it slightly warmed next time and/or add spices. - 1/7/08
