Super Good and super quick! This white fish recipe is spectacular! If you want an amazingly quick meal, this is the way to do it. For a little less tang, reduce the lemon juice. Ingredients

    3 oz Cod (or your choice of white fish)
    1/4 cup grated Parmesan cheese
    2 tablespoons light margarine, softened
    1 tablespoon plus 1 1/2 teaspoons mayonnaise
    1 tablespoon lemon juice
    1/8 teaspoon dried basil
    1/8 teaspoon ground black pepper
    1/8 teaspoon onion powder
    1/8 teaspoon garlic salt

Directions

Makes four 4-oz. servings

1. Preheat your oven's broiler (Hi setting). Grease a broiling pan or line pan with aluminum foil.
2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder, and garlic salt. Mix well and set aside.
3. Arrange fillets in a single layer on the pan. Broil a few inches from the heat for 2-3 minutes. Turn fillets over and broil for 2-3 minutes longer. Remove the fillets from the oven and cover them with the Parmesan mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. DON'T OVERCOOK!

    This may sound a strange combination but I wanted something to give brussels sprouts a little zing so decided to try one portion of left over parmesan mixture on them. I am so glad I did, it made the brussels sprouts taste wonderful, light and fresh and delicious. Definitely going to do this again! - 5/11/10

    It doesn't say in the ingredients list but if you look at the 'full breakdown' of the nutrition info she has the fish listed as: "Sea Queen Whiting fillets, (4 oz)". Havent tried it yet but I'm def. going to now. :) - 4/25/10

    Loved it. Through it together last minute and didn't even have to fully thaw the Mahi I used from Costco. Just defrosted slightly in the microwave first and broiled slightly longer. Husband loved it too! - 6/5/09

    Best fish ever! Used onion powder as I'm watching the salt and cut back on the mayo. The ingredients didn't indicate the number or size of fillets so I used 4 fillets about 4 oz each. This is my favorite fish recipe to be sure! Thanks! - 5/27/09

    This is a keeper! I used this on lake-caught white bass, and it was the best fish I've had all year. I didn't use the margarine, just light mayonnaise, lemon juice, pizza seasoning and Parmigiano. Broiled it until the Parmigiano bubbled and browned, that's it.     I'm not much of a fish fan. I've only cooked it a few times in my life. When I saw this recipe and the excellent reviews I decided to give it a try. It was "okay" but it didn't make me a fan of fish. I wanted to love it but I didn't think it was anything spectacular. I used fresh tilapia. - 9/29/12

    I love this. I had a large filleted slab of white fish with skin so did not turn over when broiling. Broiled for 2 minutes then spread sauce/seasoning mix on top and broiled about 3 minutes more until slightly brown. Delicious! - 9/29/14
