Ingredients

    1 package cornbread mix
    2 tablespoons canola oil
    1 egg, beaten
    3/4 cup skim milk
    1 cup frozen corn
    1 jalapeno, seeds and ribs removed, chopped

    Chipotle-Honey Butter
    4 tablespoons unsalted butter or margarine
    1 tablespoon honey
    1 chipotle pepper in adobo sauce, chopped

Turn this into a quick dinner by stirring a can of drained and rinsed black beans and 1/2 cup shredded low-fat sharp cheddar into the batter.

Use the remaining Green Giant® Honey Roasted Sweet Corn for a quick dinner tomorrow: Saute lean chicken breast, then top with your favorite salsa and Green Giant® Honey Roasted Sweet Corn. Serve with brown rice.


Directions

Preheat the oven to 400 degrees F.
Mix together the cornbread mix, oil, egg, milk, frozen corn, and jalapenos in a medium bowl, just until combined.
Coat a 9x9" baking dish with nonstick spray, then pour the batter into the dish.
Bake 25-30 minutes, until the top is golden brown and a toothpick inserted into the middle comes out clean.
While the cornbread is baking, prepare the Chipotle-Honey Butter.
Place the butter, honey, and chipotle into a mini food processor or small bowl. Pulse to combine or mash together using the back of a fork. Transfer to a small bowl or ramekin and freeze until the cornbread is ready.
Allow the cornbread to cool for five minutes, then slice into 12 squares. Top each piece of cornbread with 1 1/2 teaspoons Chipotle-Honey Butter.

Serving Size: Makes 12 servings. 1 square cornbread with 1 1/2 teaspoons butter

    The butter/margarine adds a lot of unnecessary fat/calories/other unhealthiness to this otherwise yummy-looking recipe. Substitutions? I'm thinking something like pureed squash for a similar texture, then add the honey and chipotle? Ideas? - 2/12/13

    I would be trying this recipe, but I need to know what size of cornbread mix to purchase. I am thinking of Jiffy, which makes a small amount of cornbread, or another brand that makes a large amount. So I'd like to know more before trying this. - 2/12/13

    From the editor: The sizes will vary; you'll need one box of whichever brand you choose, enough to yield one loaf. Last time I checked, Jiffy cornbread does contain lard, as an fyi. :) Since you're preparing the basic batter, then adding other ingredients, the exact size do - 1/23/13

    4 sources of fat and cholesterol (not counting whatever is in the cornbread mix already!).... Would have to check sugar/sodium in that honey roasted corn, adobe chile, cornbread mix, and of course, we are also adding honey.... all in all, not at all my idea of healthy. - 2/12/13

    Ready made packages are known to be higher in trans fat, even if the box says it does not have it. They do not have to put it on the label if it is below a certain level. I would not make this recipe just because it relies on a ready made mix (it makes me weary).

    Looks Yummy, but I am unhappy and surprised that a SP recipe would be made from a mix! Especially when corn bread is so easy to make. Also, why does everyone say you have to make the recipe to rate it? Its rate the recipe, not the taste,convience

    The tips for turning it into an entree with the black beans and cheese sound great. I will use my own GF cornbread recipe (which we like better than anything I made before going GF!) and I like this as a vegetarian option for dinner. Always looking for something new to try. - 2/15/13
