Ingredients

    Zucchini, sliced
    Yellow Squash, sliced
    Vidalia or Sweet Onion, sliced
    Pam, 100% Extra Virgin Olive Oil spray
    Salt & Pepper

Directions

Heat oven to 400.

Slice up fresh Zucchini, Squash & Onion. Line cookie sheet with tin foil & spray with foil with Pam spray. Spread veggies in even layer on foil lined baking sheet & spray with more Pam on top. Sprinkle with salt & pepper. Bake for 15-20 minutes, turning once.

**TIP - I slice up a lot of veggies at once & bag them in ziplocs. This way I have a bag of veggies for a quick dinner even when I'm late form work. Very handy!

    I make this all the time. DH is on low sodium diet, so I use Mrs. Dash garlic & herb instead of salt. I also usually add mushrooms and toss with a little balsamic vinegar to boot up the taste for him since no salt. Yummy!! - 7/7/11
