Ingredients

1 package frozen mixed vegetables
1 pound boneless, skinless chicken breast, chopped into bite-size pieces
1 tablespoon no-salt seasoning blend
black pepper to taste
1/4 cup light cream cheese
2 tablespoons chicken broth
2 cups cooked brown rice
1/4 cup whole-wheat breadcrumbs
Tips
Make this dish vegetarian (and even faster): Swap in one can of drained and rinsed chickpeas.
Directions
Preheat the oven to 375 degrees Fahrenheit.
Prepare the mixed vegetables according to package directions, then drain any excess water.
Meanwhile, preheat a medium skillet over medium-high, then coat with cooking spray.
Add the chicken to the pan, season with the no-salt seasoning blend and black pepper, and cook until no longer pink, about 10 minutes.
Remove from heat, then stir in the vegetables, cream cheese, broth, and rice.
Transfer to a greased 8x8" baking dish and top with the breadcrumbs. Bake 15 minutes, until the breadcrumbs are golden brown.
Portion size: About 1 cup

Those who think this a "lot of calories" are perhaps forgetting this would be your main dish. Your main dish would have more calories and bulk than say your fruit or vegetables; which if you are on Weight Watchers are considered as free or 0 points. What do you want? FYI: Your picture looks like it was made with white rice. I plan to make this casserole, except I will cook my brown rice first. I don't like "instant" rice, the texture is off somehow. Our family were big rice eaters growing up and I know what "real" rice tastes like. Everything else looks good. - 2/26/13
