Number of Servings: 6

Ingredients

    1 pound sirloin, cut into 1/2 inch cubes
    1 cup onion, chopped
    2 cups carrots, chopped (fresh or frozen)
    1 cup celery, chopped
    1 cup mushrooms, sliced
    1/2 cup pearl barley
    2 cans (14.5 ounces each) beef broth, low sodium
    2 cans (14.5 ounces each) diced tomatoes, no salt added
    1 (6 ounce) can tomato paste
    2 tsp. Italian seasonings
    1 tsp. dried parsley flakes
    1 bay leaf

Directions

1. Spray a large skillet with cooking spray and brown the meat and onions.

2. Place meat and onions in a 5 qt. slow cooker. Stir in remaining ingredients. (Feel free to add any other seasonings you wish)

3. Cover and cook on low for 8-10 hours, or on high for 5-6 hours, or until meat is tender.

    This was really great! I made it exactly as the recipe states, but did add a little broth at the end to thin it out a bit. My entire family gobbled this down and asked for more! A perfect cold weather fix it and forget it meal! - 10/13/09

    Not what I was looking for, was hoping for a clear broth, but for a tomato based soup, this isn't bad. Great w/ parmesean cheese - 1/18/11

    Husband liked it, I modified it & he wants more modifications. Added garlic, minced whole hot pepper, 1/4 c wine (not enough). Dropped mushroom, tomato paste. Husband wants me to add Worcestershire sauce next time. Mine was also like a stew, but my husband liked it like that. - 9/29/10

    Very nice, more of stew than soup, after cooking mine I added about 2 1/2 cups more broth. Next time I'll leave out the tomato paste. Thanks - 1/20/09

    Incredible!
    I used a combination of venison and bison meat in this soup and added 1/2 c red wine. Wow! Absolutely fabulous! We'll be eating this one often! - 8/7/08
